LIVINGSTON, TX – In a stunning display of agricultural prowess, Mildred Jenkins of Onalaska shattered records at this year’s Polk County Fair by selling an astonishing 500 jars of pickled okra at her booth. The previous record stood at a mere 250 jars and had stood untouched for over a decade.
Jenkins, a lifelong resident of Polk County, has been perfecting her pickled okra recipe for the past 30 years. She credits her secret ingredient, a dash of jalapeño juice, for the unique flavor that has captured the hearts and taste buds of fairgoers year after year.

For now, she’s enjoying her moment in the limelight, basking in the sweet and tangy success of her beloved pickled okra.
